Dry brine: Toss 2–3 lbs of wings with 1 tbsp baking powder + 2 tbsp of the rub. Refrigerate uncovered on a rack overnight to dry the skin. 2. Tang spritz: Mix 2 tbsp Worcestershire + 2 tbsp apple cider vinegar. Use this as a spritz during smoking to add tang and help the rub stick. 1. Preheat smoker to 275–300°F. Use hickory or pecan wood for that Southern backbone. 2. Place wings on the smoker and spritz with the Worcestershire-vinegar mix every 30 minutes. 3. Smoke for 1.5 to 2 hours, until skin is crisp and internal temp hits 175–185°F for that perfect bite. Once smoked: Toss wings in a bowl with a light splash of Worcestershire. Dust with remaining dry rub and a touch more lemon pepper for brightness. These wings are earthy, spicy, and tangy with a crisp bark and no sticky mess. |
