DIDDY TRIVIA:  FOOTBALL KNOWLEDGE FOR THE NEXT 25 YEARS TO LIFE

Like Aaron Hernandez, before him-- It took us a while to replace OJ, but at last we found the right guy.
Introducing Diddy Trivia.  And away we go...

Last week's
question is, "In 1965, Gale Sayers set a record for the most touchdowns scored in a rookie season. How many touchdowns did Sayers have that year?

Gale Sayers scored 22 total touchdowns to set the record for the most total touchdowns in a rookie season. This is a record that still stands to this day and will be pretty tough to beat.

This week's question, "Who was selected earlier in the 2011 Draft, JJ Watt or Julio Jones?

Diddy is tapped out both figuratively and literally.  Everyone should be prepping for a run at the playoffs, and in honor of "Bye-Magedon," Diddy has decided to give away free tickets to this holiday's biggest film, "Wickedly Screwed."  Faced without a QB, it's the loving tale of two Brians limping into the playoffs after starting out 6 & 0.  Enjoy!

Two weeks left in the regular season.  Here is where it stands if the season ended today.

One Seed:  Midnight Riders with a Bye Two Seed:  NY Gangsters with a Bye
Three Seed:  Ballbusters Four Seed:  Midnight Dawgs
Five Seed:  Mean Machine Six Seed/Wild Card:  Throw That (t)D

In this scenario-- Throw That D would face the Balbusters and Mean Machine would take on the Midnight Dawgs.

Everyone is still in the hunt for the Wildcard.  It is based on who of the nine remaining teams has the most total points for the season. The kicker is that we have at least five teams closer than others in the chase...  And lets throw a curve ball, the leaders above are only 1 or 2 games out...  The Wildcard sits at 576 points right now.  The next in line?

Rodger's Witch with 570 points.  Not only is Jake six points away, he is only one game out from first place in the West.
Blitzburgh has a very similar scenariio with 548 points and is one game out from first in the Central.
Hoffnuts is at 543 total points and is also one game out first in the West and they are on the coat tails of Rodger's Witch.
Don't laugh, Romosexual Tendencies has 514 points.  His bye week woes are mostly behind him and they could close in on the Wildcard.
I said no laughing!! No, This is Patrick has broken the threshold at 507 pionts and Stafford has been resurrected. So yeah, he has a chance.

Granted, we need the higher scoring teams to slow down their pace and let the three others in... As Soldier Chucky has shown, miracles can happen.

Flying Gators 493 pts  /  Fantatics 477  /  Cunning Linguists 476:  YOU GUYS NEED TO F'N EXPLODE (Fantatics could win out to get it in).  It's a damn shame that Joe left 20+ points on the table with his roster setting practices.

On a final note, Riders and Gangster have the "Bye Week Blues" while the Ballbusters just got over theirs...  This shit is going to shuffle by next Tuesday...

BomB OuT!

Pedro goes 4 for 7 in Week XI.  He is now 57 for 84 on the season, (679).
Week XII predictions are brought to you by Surgeon General, Janette Nesheiwat.

Yacht Rock

A rookie enters training camp and his new teammates inform him, “At your first team dinner as the new guy, you will have to give us a talk about sex.” The evening arrives and he gives a detailed, humorous account of his sex life.  When he got home, his wife asked how the evening went and not wanting to lie, but also not wanting to explain exactly what happened, he said, “Oh, I had to make a talk about yachting.”

His wife thought this a little peculiar but said nothing more and went to sleep. The next day, she bumped into one of his new teammates at the supermarket and asked, “I heard my husband had to make a speech last night. How did it go?

”His teammate said smiling, “Oh, it was excellent! Your husband is clearly very experienced!”

The wife looked confused and replied, “Strange, he has only done it twice and the second time he was sick.”

Oklahoma Fried Onion Burger

Ingredients
Ground Beef (73/27 or 80/20) Meat to Fat ratio
Yellow or White Onions
American Cheese
Mustard and Dill Pickles
Soft Potato Bun
Burger seasoning of your choice.

The key to a great smash burger is fatty beef. You want this beef patty to cook in its own juices, so go with 73/27 or 80/20. This is the beef to fat ratio. If you go with a 90/10, you will end up with a dry burger. If you can, grind your own (using brisket trimmings). A typical brisket will yield a 70/30 meat to fat blend if you use 100% of the brisket. If you do a little trimming, you can get to a good 75/25 mix.

Once ground, or picked up from your local grocery store, roll your meat into 3 oz balls. Slice your onions.  You want the onions sliced paper thin. The thinner, the better (use a slicer, it helps). This burger calls for an obscene amount of onion. The more the better. This burger was originally created in the 1920's in an attempt to lower food costs. Cooks found that thinly sliced onions and smashed burgers were a less expensive and tasty option. Hence, the Oklahoma Fried Onion burger was invented.

Place your 3 oz burger balls on a screaming hot griddle or cast iron pan. Try to get the griddle heated up to around 450 degrees. Then cover each ball with a handful of thinly sliced onions. And I mean COVER. This seems like a lot, but it works. You might as well start adding some char to that bun too. Now grab your favorite smasher and start smashing. Get it as thin as you can. You want the meat to stick to the hot surface of the griddle which creates a dark and flavorful crust. This is known as the maillard reaction. Press down and count for 10. This will ensure the meat sticks to the griddle.

Once it's pressed thin and sizzling away, add your favorite new seasoning. Use a Burger Blend has some nice large granules. Perfect for quick burgers.  If you press the burger hard enough and have a hot griddle, the beef will stick to your cooking surface. This is where the magic happens. The juices have nowhere to go but up through the top of the burger pattie. This helps keep the ultra thin burger super juicy. The fat is also helping create that beautiful crust on the bottom. Once the juices start escaping from the top, it's time to flip. This is usually around 45 sec to a minute mark.

Take a sharp spatula or a paint scraper from your local hardware store and scrape that burger off the griddle. Use a little elbow grease and really scrape under that burger, Make sure you get all of the goodness off the griddle as that's where the true flavor is on all smash burgers. Add a few slices of American cheese and you are almost home. American cheese is the way to go on Smashers. Once the cheese is melted, stack them on top of one another.  Go ahead and finish toasting your bun on the grill, once your bun gets a little color, add mustard and pickles. This is all you need for this burger.

Add your double patties of tastiness and fold that bun over. It's as simple as that. This burger takes about 3 mins from start to finish and will blow you away with some fantastic flavor.
